These chops comprise all the hardworking muscles in the forequarter of the lamb. As they also have some fat and bone, they are full of flavour and are a very versatile cut. They are great for a curry or casserole, but they are also delicious grilled on the BBQ (we like to marinade them first in some lemon juice and salt).
